Built on a 22-year-old organic sourdough starter, the dough is slowly developed over the day, combining sustainable flour, water & EV olive oil.
Fermented, rested and carefully handled at every stage, it’s designed to deliver a crust that’s light, crisp and structurally sound - made to hold, never flop.
Each pizza is hand-stretched into our signature 18” pies, staying true to the traditions of classic New York slice shops.
